Pork delicacies......Chinatown...

၀က္သား ဒုတ္ထိုး
 (pork on a stick)

it's in chinatown, it's on the sidewalk.....baskets and baskets of pork paraphenelia....
small intestines, large intestines, heart, liver, kidneys, snort, ear, tongue, larynx....
ehehehehe...i can see u cringing, vomiting...but really, it's quite, quite tasty...

HOW THEY ARE PREPARED : all these parts have been washed and marinated with light soy sauce, a little sugar and salt..then boiled down with water until they are all nice and tender and sweet tasting...then they are sliced when the customer orders, and pierced and served on a piece of bamboo stick....just dip them in the hot broth, and then the spicy chilli-garlic sauce and enjoy...

When we are done eating, the stall owner counts the number of bamboo sticks to calculate the bill...VOILA!

a typical Burmese meal

think oil, think chilli, think fish paste...hahaahah.....not for the weak-hearted folks, for sure!

We Burmese try to incorporate a handful of tastes into our food repertoire,
a little saltiness here, a little bitterness there, a whole lot of oiliness everywhere....

a typical Burmese meal would center around a low, round table, surrounded by ALL family members.....

the dishes u ask?.........

a meat curry (either with a thick onion and chilli based gravy OR a thin soupy one),

a veggie dish (either fried greens or a spicy salad),
a soup (mostly tamarind based veggie soup OR a creamy bean soup) and

for the "piece-de-resistance"  Ta Da!!!...

ငါးပိရည္ခ်ဳိ (burmese spelling)

for fermented fish paste boiled with water into a gravy like substance
and mixed in with pounded fresh garlic, roasted tomatoes and green chilli...

it's in fact a spicy dip accompanied with fresh crunchy cucumber/boiled veggies/fermented veggies.....
and to wolf all of the above down with...RICE, RICE and more RICE...
YUM !!!
